Apple & Chestnut Muffins


What a better way to enjoy the last moment of this beautiful season than celebrating with beautiful and delicious chestnut and apple muffins.

These ones can be vegan (drop the egg) and also can be made without refined sugar as per your taste and needs. So let’s get into it!



165 g of chestnut flour

2 tbsp of ground almond (10 gr)

2 tsp of baking powder

1/4 tsp of baking soda

2 tbsp of maple syrup

3 tbsp of xylitol

2 tbsp of coconut oil (melted)

1 small pot of apple sauce no added sugar (100 gr)

1 egg

1 tsp of apple vinegar

80 ml of hot water

1 apple chopped in small pieces

2 tsp of cinnamon

1 tsp of vanilla extract

Icing sugar (optional)



Preheat the oven to 180°C

Mix all the wet ingredients into a bowl and then add all the dry ones (except the icing sugar)

Pour the mix into muffins pan. Personally I love to use silicone ones as they are much easier to turn out.

Bake for 20 minutes and test the cooking with a knife. If needed make the cooking time a few minutes longer.

Let the muffins cool down before turning them out. Once they are cold, sprinkle icing sugar on top. Delicious for the eyes and the belly!
